In August of 1998, we opened the first Alfredo’s store in Weatherford, Oklahoma, a community of 12,000 people 75 miles west of Oklahoma City. The original facility was a 1500-square-foot remodeled pizza joint. We could squeeze 45 people into the small dining area; it was truly a community watering hole. There was no waiting area so on Friday and Saturday nights there were more people waiting in the parking lot than there were cars.

It was never my intention to grow beyond Alfredo’s Mexican Café’s small beginnings in Weatherford, but growth became a by-product of the value, quality and service Alfredo’s consistently produced for the public. I opened the second location in Yukon in 2002 and our third and largest location in Moore in 2006. The fourth location opened in Edmond in 2011 and a fifth opened 2013 in Warr Acres. In just 15 years, Alfredo’s has grown to just under 25,000 square feet of restaurant space and employs more than 200 people.

I am very grateful for our dedicated management team and employees. I encourage everyone on the Alfredo’s team to think outside the box and, as the owner; I stay out of their way and let them do what they do best. I take care of them and they take care of me — we’re like family.

Alfredo’s is truly blessed and feels the best way to express our gratitude to a gracious and abundant God is to share our blessings with others. For this reason, a portion of every dollar Alfredo’s patrons spend goes to drill clean water wells in Burkina Faso, Africa and to two children’s orphanages in Manos de Amor, Mexico and Nantale Children’s Home in Uganda.
